As you may know, we are busy with renovating our house. And, it’s the busiest I’ve EVER been! We are DIY-ing this renovation while working full-time jobs. Oh, and we have a deadline. AND we are moving in the process. We have been BUSY and it has been incredibly hard with our current life circumstances to maintain eating well.
It was RARE that we ate out for meals prior to renovating our home and even when we did, we were very particular with which restaurant we ate at. Because we use EVERY spare minute apart from our jobs, to work on this house, we’ve been scrambling for food.
I’m sad to say that since our house has been a priority, food has devolved to what’s fast and cheapest. A lot of times it’s eating out but I still try to make it to the grocery store and make quick meals. I’ve made so many crock-pot meals, eggs and bacon, and biscuits. I plan to eventually share with you some of those recipes. However, this smoothie recipe has been our “go to” since it’s hot outside and crock-pot meals are usually too hot to enjoy on 100 degree days when we’ve been working in a non-air conditioned house. It takes me very little time to make, and they keep you full, unlike most smoothies that are made with non-fat products and whey protein.
My favorite part about this smoothie recipe is that it can be made so many different ways depending on what fruits you have on hand. If you want to get really crazy, you can make a chocolate peanut butter smoothie by adding 4 tbsp cocoa powder, a spoonful of fresh peanut butter instead of fruit.
Basic Smoothie Recipe
1/2 cup whole milk yogurt
1/2 whole milk – preferably raw
1/2 frozen or fresh fruit of choice (e.g. pineapple, strawberry & banana, peach, apple, etc.)
1 tsp real vanilla extract
2 raw egg yolks
1 tbsp unrefined coconut oil
3-4 tbsp real maple syrup
Combine all ingredients in blender and blend until smooth.
Be sure to read the ingredients on your yogurt. I’ve found that even though the label says, “Whole Milk” the ingredients often contain non-fat milk. Yeah, I know, frustrating!
